A fat-less cake for Poppy

Following up from Poppy's comment that she wouldn't be able to eat the Welsh Cakes due to the fat content, and yes there is a lot, but from the same old cookbook here is a quick and easy fruit cake [I think I put the cake on before] and it does not have any fat
Ingredients
8 oz  [200gm] SR flour
4 oz [100 gm] white sugar
4 oz [100 gm] dried fruit, raisins, currants, sultanas or mixture
pinch salt
1 egg mixed with a scant teacup milk
Method:
Sift flour,  add dry ingredients,
beat egg lightly and add with milk to make stiff dough
put into tin and cook as below

2lb loaf tin greased and floured, oven at 4, D or 190 deg., time 45 min - 1 hour.
Another really easy everyday cake

  1. That sounds really good. I think most cooks from that age cooked mostly by experience without a recipe which is what I do most of the time. A scant teacup of milk would be what? I would guess somewhere around 4 - 6 ounces. I do follow a recipe carefully if it is something I am making new.

  3. Too right Beth, cooking, especially baking now seems a bit more of an art, and can be difficult with ingredients that you either haven't got to hand, or don't even know what they are. I also like to stick to the quoted recipe till I'm confident enough to make alterations, I use a small cup for the milk in this recipe adding it a bit at a time till I like the feel of the mixture

I enjoy baking, finding it quite therauputic , troublen is I sometimes get carried away and bake too much and have to either give it away, no problem, or eat it, could be a problem, my freezer's always full. Nice to see you her Wifie, I've tried getting into your site but it's near impossible.
